Ideally you should be looking for one that has at least 200 watts of power. This will ensure that you are able to use it on even the most difficult of foods. You will also find that the blender runs more smoothly and there will be less chance of getting splattered if you have lots of power.

One useful feature that is starting to appear on the better models is a chopping attachment. This allows you to use your immersion blender as a food processor getting rid of another appliance that you need. You will find that this makes it a lot easier to chop up foods since you can do it right in the pot that you are going to cook them in.
